How do I know if I need 37mm or 27mm bolts?

If your installation uses a flat mount bracket adapter between the frame or fork and the caliper, use the 37mm bolts. The adapter adds thickness that requires the longer bolt to reach the mount threads with adequate engagement. If the caliper mounts directly to the frame or fork's native flat mount interface without any adapter, use the 27mm bolts instead.

Are these SRAM-specific or will they work with other flat mount calipers?

Flat mount is an industry-standard interface, not proprietary to SRAM. These bolts use standard T25 Torx M5 threads and will work with any flat mount compatible caliper that uses standard flat mount bolt specs. That said, always verify thread pitch and bolt diameter before installing third-party hardware in safety-critical brake mounts.

Why stainless steel instead of standard steel?

Standard steel bolts in aluminum flat mount threads corrode and seize over time, especially on bikes ridden in wet conditions. Stainless steel resists corrosion and is much less likely to seize into aluminum threads, which makes future caliper removal significantly less likely to strip or damage the mount.
